We offer a wide variety of seasonal limited menus such as nodoguro (blackthroat sea perch), kobako-kani (female snow crab), amaebi (sweet shrimp), Noto-buri (yellowtail), kegani (Japanese hairy crab), and aka-zuwaigani (red snow crab).
Kaisendon is a national obsession nowadays in Japan. However, what makes it different in Mitone is that you can choose between our signature vinegared rice which has an over 60 year long history, or 100% of Noto Koshihikari white rice.
The fresh Noto seafood served on top is exceptional. Please enjoy it with our original soy sauce. Our experienced sushi chefs handle all processes from shikomi (preparation) to slicing sashimi and presentation.

The flavor of Noto is synonymous with Noto-fugu (puffer fish), buri (yellowtail), amaebi (sweet shrimp), and crabs! However, Noto’s kegani (hairy crab) is not so well known because of its low number of catches. It is mainly caught in Notojima Enome fishing harbor and Okunoto (inner Noto) Wajima harbor, and mostly consumed inside the prefecture. Each bowl is very carefully prepared by our chefs to make it easier to eat. Please, enjoy!

Enjoy the Winter Flavors of Noto Peninsula

Buri (yellowtail) is one of the popular winter flavors of Noto. The mountain water from satoyama flows into the ocean, satoumi. Buri, the yellowtails gather to eat the small fish nourished by the sea water. In Japanese, some fish are called by different names at different stages of growth. Those fishes are called “syusse (success in society/life)- uo(fish)” including buri. Buri is the largest yellowtail followed by gando and fukuragi. All taste wonderful in winter!

Winter in Noto is for kano-gani (snow crab), kanburi (yellowtail particularly in winter season usually from November to January), and amaebi (sweet shrimp). Female kano-gani (snow crabs) are called kobako kani in Ishikawa prefecture, and the uchiko eggs that are inside of the shell are exquisite. This bowl is served luxuriously using two kobako kani. A perfect searing technique is the key. Lightly searing the nodoguro brings out the fatty oils and gives the original taste of its own. You can enjoy even better with wasabi soy sauce mixed with grated daikon radish on top of the slice.
